A “Moon over Miami” (also known as a “Frog in the Hole,” “Eggs-in-Toast,” “Cowboy Eggs,” or even a “Jack in the Box”) is a breakfast dish consisting of a slice of bread with a circular hole cut out of it, fried, with an egg in the hole.

The circular piece of bread is usually fried in the pan next to the slice. In the lunar metaphor that gives this dish its name, the circle of bread represents the moon, and the fried egg represents the moon’s reflection in the ocean.
